Strawberry choc mousse cake

Ingredients:
Digestive Biscuits
30g Unsalted Butter
200g Cream Cheese
40g Sugar
80g Sweet Whipping Cream
1 tablesp Cocoa Powder
2 tablesp Baileys Wine
2 teasp Gelatine
60ml water
40g Chocolate
2 Strawberry
Steps:
  1. Melt the butter and crunch the Digestive Biscuits.
  2. Mix the butter and the crunched Biscuits,then press it into the cake tin and put in freezer for 10 minutes.
  3. Beat Sweet Whipping Cream until they hold stiff peaks.
  4. Stir well with cream cheese, sugar, cocoa powder, and beat till smooth. Add Gelatine to cold water, and melt it with warm water outside the mixing bowl.
  5. Add Baileys Wine and melted gelatine to the mixture of cream cheese.
  6. Put all the mixture to the cake tin, then freeze it in the fridge for 3 hours.
  7. Beat up the sweet whipping cream,and decorate with cream,strawberry and cocoa powder.


Chocolate mango cake

Ingredients:
60g butter
4 eggs
120g granulated sugar
120g flour
120g sweet whipping cream
2 mangos
40g Cocoa powder
50g Cooking Chocolate
1 Strawberry
Steps:
  1. Beat egg evenly with egg mixer. Add sugar and stir evenly.
  2. Beat with electric mixer until agg mixture changes to lighter colour and soft peaks form.
  3. Sift flour 3 times at least. Add shifted flour to egg mixture gradually.
    Stir well. This can increase the air inside mixture
  4. Add melted butter. Stir well
  5. Line base and side of a deep round cake tin with non-stick baking paper. Pour egg mixture into cak tin. Smooth surface.
  6. Knock cake tin onto table 2-3times to smooth surface. Put into pre-heated 200 degrees oven and bake for 20-25minutes. Take out and stand cake in tin for a while. Take out cake and transfer to cooling rack. Cool until harden.
  7. Beat up the half of the sweet whipping cream(60% high) and cut mangos into small pieces.Then mix the cream and mangos together.
  8. Cut the cake horizontally into 2 pieces, place the first piece into the cake tin, then put in the mixture of cream and mangos.
  9. Place the other piece of cake into the cake tin, freeze the cake in the fridge for 2 hours.
  10. Beat up the other half of the sweet whipping cream(80%),evenly paste the cream in the surface of the cake.
  11. Use the oven to melt the cooking chocolate,and make shape that you want, then wait till cool down and hard.
  12. Decorate the cake by Cocoa Powder,Strawberry and the shaped chocolate


Traditional chinese Egg tart

Ingredients:
76g Flour
48g Butter
28 sugar
1/5 egg head
few drops vanilla essence
Stuffing:
184g water
55g sugar
2 and a half eggs
4 teaspoon milk
Steps:
  1. Blend sugar into butter, stir till light yellow, blend into 1/5 egg to stir well
  2. Sift flour, sprinkle into above ingredients, knead & pour vanilla essance, knead till done, place into freezer for 30 minutes
  3. Cook stuffing, put sugar into water, till sugar melt, turn off & cool
  4. Blend milk & eggs into cold syrup, beat till tender.
  5. Separate dough into 5 portionsps, arrange each portion into separate mould, press & make tart shape
  6. Pour stuffing into mould (80% full), back at 250 degrees for 15 minutes, and Enjoy!


Chocolate cookies

Ingredients:
100g Flour
75g Butter
75g Sugar
1/2 Egg
12g Baking chocolate
Steps:
  1. Grate baking chocolate with grater. Set aside
  2. Put butter and sugar in maxing bowl. Fold in shifted flour.
  3. Rub flour mixture until it resembles fine bread-crumbs
  4. Add grated chocolate. Stir well.
  5. Pour in beaten egg. Stir well with hands.
  6. Line base of baking tin with non-stick baking paper. Divide chocolate dough into small portions. Arrange on the baking tin. Put into pre-heated 150 degrees oven and bake for 15 minutes. Take out and transfer to cooling rack. Let cool and Enjoy!


Tiramisu

Ingredients:
16 Sponge Fingers Biscuits
200g Prepared Coffee(espresso)
50g Marsala
250g Mascarpone Cheese
3 Egg Yolks
60g Caster Sugar
3 Egg Whites
125g Cocoa Powder
Steps:
  1. Beat egg whites until they hold stiff peaks.
  2. Blend egg yolks, sugar and mascarpone cheese until smooth.
  3. Carefully fold egg whites into the cheese mixture
  4. Combine coffee with marsala
  5. Lightly soak each sponge Finger biscruit into coffee mixture and layer in a serving bowl with cheese mixture.
  6. Continue to fill bowl with alternate layers of Sponge fingers and mascarpone, finishing with a layer of mascarpone mixture.
  7. Sift an even layer of coca powder over the top, cover and refrigerate until serving time and Enjoy!
